A Night Out For My Mother

Song:  Tao

Artist:  Kitaro

My mother is still recovering from a fall where she had cracked her pelvis.

She has to use a walker for now...
until she is fully healed.

She will be 80 years old in a few months.

Although I try to ensure she strengthens her bones through weight training...
and through a nutritious diet...
her balance is not what it used to be.

However...
she has shown rapid progress in her rehabilitation...
and so...
my younger sister and I have been taking her out as much as we can...
so she doesn't feel cooped up in the house.

We had just come from a mountain drive.

As you can see...
she really enjoys the Atlantis Sky View Terrace.

It is our favorite place for sushi...
and sea food (at the Oyster Bar).

The atmosphere...
the food...
and the service, is simply great.

I love their cooked scallop rolls.

My favorite nigiri sushi is salmon with lemon slices atop.

My mother had eaten a lot...
and as you can see from her face...
she was starting to fill up.

She did...
however...
finish everything she had ordered.

We both left quite satisfied.

My younger sister was not with us on this night...
as she had to take care of some business else where.

Both, my mother and I...
were very full...
and shortly after going back home...
we both fell asleep.

My mother loves eating out.

It is one of her simple pleasures.

-------------

My mother is often unguarded.

Her actions reflect her state of mind.

When she gets excited or happy...
she walks very fast.

She was pushing her outside four wheeled walker
at an abnormally fast pace when we first arrived.

She started laughing when I looked at her and remarked how quickly
she was moving.

I could tell she was hungry...
and was very much looking forwards to eating.

Her pelvis doesn't hurt anymore.

Although...
her knees hurt some when she walks.

But this is due to moderate arthritis.

However...
we have her walk as much as possible.

She enjoys walking around once she starts...
and she always feels so much better afterwards.

A Spaghetti Dinner For Five

Song:  Crossing The Sweetwater

Artists:  Jeannine Goeckeritz and Tamara Oswald

A couple of days ago...
I made dinner for my elder sister and her husband
(they were here for a couple of days to take care of some business)...
as well as for my younger sister and my mother.

I made Spaghetti with meat sauce.

I love thick spaghetti.

No exaggeration...
I stocked up my mother's pantry with approximately 100 boxes of these noodles.

Not only because it is the best...
and the store too often runs short of them because they are popular...
but, so long as they are kept dry...
they are edible for millennia.

They are inexpensive...
and the perfect survival food.

This, along with plenty of sprout seeds...
powdered milk and powdered eggs...
all of which last a long time...
will provide all the necessary nutrients in cases of mass disaster.

While I usually buy Prego sauce...
I couldn't find the spicy style I prefer in it.

I used two lbs of ground beef.

I prefer a zesty tomato and green onion salad when we eat Italian meals.

I find this particular dressing to go exceptionally well with the tomato and green onion salad.

This salad is especially healthful for the elderly.

I always try to incorporate tomatoes in several dishes a week for my mother.
She especially likes this salad.
It is very flavorful.

I also use various spices and fresh mushroom slices in the spaghetti.

I love a lot of meat in my spaghetti.

I don't often make beef dishes for my mother...
but I try to do so about once a week...
as it is a rich source of B vitamins...
far more so than may be gotten from other sources.

I had also made garlic bread.

My elder sister had concluded with her business on this day.

On the following day...
she departed for her home in CA.

She expects to return in a month or so.

Addendum:

I decided to try what my younger sister does with her spaghetti.

She adds stewed tomatoes to her spaghetti.

It makes the dish so much tastier.
I made some on this night...
and I also omitted the mushrooms.
This is how I am going to make my spaghetti from now on.

These stewed tomatoes made all the difference in the world.

I had forgotten to take a picture until I was almost finished.

I used the same for everything else.
