Peppers are so important to have on a regular basis.
You should, on a daily basis...
try to eat as many vegetables of as many colors as possible.
Each color has much more of certain nutrients.
Ponzu peppers are a delicious way of enjoying eating enough of them.
Just one pepper each of Green, Yellow, Orange, and Red
will feed a family of 4-5.
You need to cut them so they will lie flat in the fire grilling basket.
Fire roast them over an open gas flame on high.
You will notice two things about this basket besides being of a generous size.
One...it has depth. It forms an actual basket...it is not flat.
Two...it has a locking ring to keep the halves together while fire roasting.
The first completed batch is on the left.
An open basket ready for more.
The second batch loaded up.
The second batch with locking ring in place.
You will roast them but a few minutes in each of four areas.
Two for each side if you use one burner.
Showing the depth of the basket.
It is available on Amazon.
The last batch ready to roast.
The fire roasting releases the tremendous aroma and flavor
in the peppers.
All batches completed.
This is Ponzu...
which is readily available in most grocery stores...
in Asian stores...and on Amazon.
Just pour a little into a separate bowl...
and dip the peppers in one at a time.
I also made butter sautéed scallops.
My mother's meal.
My younger sister's.
And mine.
To get the health benefits of vegetables...
you need a large quantity...
not only for the nutrients...
but for the fiber.
I try to have different vegetables for each supper.
On some nights...
we will have one of several types of green salad...
tomato and onion salad...
Ponzu peppers...
or raw broccoli...usually with miso dressing dip....
or some type of mixed grilled vegetables.
I wanted to show you the quantity of veggies in relation to a full meal.
When buying peppers...
get all four colors.
Ponzu peppers are a sure fire way of eating the four main vegetable colors...
and so, getting enough of the nutrients of each color.
Once a week or so should keep you topped up.
