Country Americana Cooking - SOS

SOS...
although my father called it...
Something On A Shingle...
the first S stands for something else.

The shingle is the underlying bread.

If you were from the country...
or you were in the US military...
you know of this dish.

It is a hearty, quick and easy meal usually made for breakfast.

You simply brown ground beef...
add about 1/4 cup flour per pound of ground beef...
add milk until it shows as in the below pictures...
simmer to reduce the milk about halfway
(Do not allow to boil, as a skin will develop on the milk)...
and then serve over bread with salt, pepper, and ketchup...
with the optional amounts of hot sauce to taste.

























I like the peppery taste of more coarse ground pepper.


I like using sourdough for my bread...
as it is thicker and more filling.



There you have it.

The simmering of the milk takes but 20 - 30 minutes...
so, the whole meal can be ready in about 30 - 40 minutes.


It is a very simple but filling meal.


This is an American country meal enjoyed by millions.

Mexican Food Made Easy

This morning was nice...
and then another storm is supposed to move in sometime soon.


I went food shopping this morning.

I decided we would have Fajitas tonight.

I picked up these portioned veggies to fire roast to go with the meal.


The beef is fully seasoned and cooked.

Just four minutes in the microwave and it is ready to go.




I bought larger flour tortillas...


a good medium heat salsa to top the fajitas...


and we also had left over cheese to also top the fajitas.


I fire roasted two batches of veggies.




My elder sister heated the meat.





My mother loves fire roasted veggies...
especially the mushrooms.





I put together my mother's fajita.






I then cut it into four sections to make it easier to eat for her.







My mother ended up eating three out of the four sections.


Afterwards...
I made two fajitas for me to eat.

Sometimes I just crave Mexican food.

This made making it but a few minute process.


My mother enjoyed her meal...
and in the morning...
so long as a severe storm doesn't move in...
my younger sister will make another country Americana dish...
SOS.
