Chicken And Dumpling Stew - Country Americana

Yesterday, my younger sister made some chicken and dumpling stew.

It was very good.

It is a very healthful and hearty meal...
as well as being not so expensive.

The recipe is below.


DUMPLINGS:

2 cups flour
4 tsp baking powder
1 tsp salt
.25 tsp pepper
1 large egg beaten
2 tbs butter...melted
1 cup whole milk


CHICKEN STEW:

1 whole chicken 4 - 4.5 lbs (2 kilos)
2.25 quarts of water
5 chicken boullion cubes
6 whole peppercorns
3 whole cloves
1 can cream of mushroom soup
1 can of cream of chicken soup.
1.5 cups chopped carrots
1 cup peas
1 cup celery
1 cup cubed potatoes
.25 cup chopped onion
1.5 tsp seasoned salt
.25 tsp pepper
1 bay leaf


INSTRUCTIONS:

Place chicken, water, boullion, peppercorns, bayleaf, and cloves into pot...
bring to boil and skim off foam.

Reduce heat, cover and simmer for 45 - 60 minutes.

Remove chicken and set aside.

Remove peppercorns and cloves, ...and discard.

Remove chicken skin and bones and shred meat.

Skim fat from broth.

Return meat to broth and add soups, veggies, and seasonings.

Bring to boil and reduce heat...
cover and simmer for 1 hour.

Uncover and bring to gentle boil.

Discard bayleaf.

Drop dumplings a tablespoon at a time into stew.

Cover and cook without lifting lid for 20 minutes.

This was my meal.


This is the next day's meal...
chicken and dumpling stew with cheese quesadillas. 

Just as with most stews...
it is even better on the next day.

This one recipe will easily feed a family of five for two days.


This was another example of Americana country cooking...
healthful, economical, hearty...
and delicious.
