The Beginning of Spring, Chili Mac, and a Sunset

Earlier Today...
my younger sister made Chili Mac.

Now...
this is just a barebones recipe...
but it produces a hearty meal.


Recipe

Ingredients:

2 lbs Ground Beef

2 cups favorite salsa or picante sauce

1/2 - 2 Tbs of Chili Powder (to taste)

3.25 cups of water

1 cup frozen corn

2 cups of elbow macaroni

2.5 cups of shredded cheddar cheese 


Cooking instructions:


Brown ground beef

Add other ingredients except cheese and bring to a boil

Continue cooking until the macaroni is ready

Add the cheese and cook until it is melted and mixed in.

Then top it off with fresh shredded cheddar to taste








The beginning of spring is here.

Flowers are just starting to bloom...
and the trees are leafing out.



Last year I had our yard guys put in trees, bushes, and flowering ground cover.

This is the first spring where they had flowered and had shown their growth.

As the first flowers just started to emerge...
in a few weeks, I expect to have many more flowers bloom.






The first Siberian Iris bloom (purple flowers in the background).






After supper...
my younger sister, the dogs, and I walked down the street to the lookout point for sunset.









Although it wasn't a spectacular sunset...
the pastel colors in combination with a warm summer like breeze
made for a very serene setting.

  1. We eat chili fairly often, especially in cold weather, but haven't had chili mac. Will have to try sometime.

    The yard looks beautiful!

  2. We have been having rain. Hopefully, after the sun comes out...I will be able to capture many of the flowers now in bloom.
